Special Holiday Cake

This cake is simple and literally melt-in-your-mouth delicious!

Basic Cake

1 box (2 cups) dark brown sugar
1 sugar box (2 cups) flour (sifted)
3 4 oz sticks butter (or margarine)
6 large eggs, lightly beaten

Cream butter and sugar together. Add flour, then eggs. Beat on high for 15 minutes. Pour batter into greased & floured tube pan and bake in preheated oven at 350 degrees for 55 minutes, or until a toothpick comes out clean. Remove from oven, allow to cool for 10 minutes, then invert cake on a plate and remove pan.

At this point, I like to drizzle a bit of a good dark rum over the cake, allowing it to sit for at least 30 minutes before serving.

If you would like an edible fruitcake, shake your candied fruit in flour or cornstarch, reserving a bit for the top, and stir it in just before pouring the batter into the pan. Top with the reserved fruit.

Want a chocolate chip cake? Substitute chocolate chips for the fruit.

Cake may also be made using powdered sugar or light brown sugar.

This cake goes extremely well with coffee or tea. I gotta warn you, though, it is rich!
